Peter Cross is a Senior Lecturer at the London Geller College of Hospitality and Tourism, within the University of West London. Peter has a professional background in food, with over 20 years’ experience working as a chef and nutritionist before joining the University in 2010. He is currently a course leader for the BSc Culinary Arts Management programme and lecturers on the subjects of gastronomy, nutrition and sustainable supply chain management. Peter has an MSc in Applied Sports Nutrition and is passionate about culinary techniques that enhance the nutritional properties in food. His PhD thesis is a review of the various audit methodologies, metrics and practices used in responsible food production with the aim of creating menus that embrace sustainable nutrition.
